ngredients:
3½ tablespoons (52.5 mL) soy sauce
1 tablespoon (15 mL) sambal chile sauce
1 tablespoon (15 mL) sugar
2 tablespoons (30 mL) vegetable oil
½ red onion, thinly sliced
2 garlic cloves, minced
½ inch (13 mm) knob ginger, peeled and minced
1 ½ cups (225 g) cherry tomatoes, halved
season with pepper to taste
1 leftover roasted chicken, warmed and cut into pieces
3 cups (400 g) steamed rice

Place soy sauce, sambal and sugar in a small mixing bowl and whisk together. Set aside. Place oil in a skillet over medium-high heat and sauté red onion, garlic and ginger for 3 to 4 minutes.
Add cherry tomatoes and continue to sauté for an additional 3 minutes. Add soy mixture to skillet and continue to cook until liquid has almost evaporated, about 3 minutes. Adjust seasonings.
Pour over warmed chicken pieces and serve over steamed rice.
