Who doesn't love this traditional south of the border dip? My mother's best friend currently resides in Mexico City and when I was younger I would travel there and visit her kids who were my age. I remember avocados on the table at every meal, and each diner would mash up his/her own guacamole tableside. In Mexico guac is made simply with avocado, lime, and salt, coarsely mashed together and used on quesadillas, on tortillas, and frankly consumed straight up as is. Whenever I make guac at home I add extra lime juice, and then the requisite salt and avocado. I also like to add cilantro, but nothing else. Simple simple simple.
