Jenny Park ( http://spoonforkbacon.com ): Chocolate truffles are perfect for holiday parties and make great gifts because they are so versatile. Once you've made the chocolate ball, you can coat them in just about any topping -- shredded coconut, chopped nuts, cocoa powder. Just be sure to save some for yourself because they'll go fast! Happy holidays!
Makes 30
1 cup (155 g) dark chocolate chips
½ cup (120 mL) heavy cream
1 teaspoon (5 mL) vanilla extract
toppings:
½ cup (45 g) shredded coconut
½ cup (80 g) toasted almonds, finely chopped
½ cup (60 g) unsweetened cocoa powder
Place chocolate chips in a heatproof mixing bowl and set aside.
Place cream in a saucepan and simmer, over medium heat. Once mixture comes to a simmer, remove from heat and pour over the chocolate chips.
Allow mixture to sit for a few minutes to allow chocolate to begin to melt. Gently stir the mixture until smooth.
Allow the mixture to cool, and then place in the refrigerator for at least 2 hours.
Once the mixture has thickened, scoop small amounts of the gnache out with a scooper and roll into balls. (You may want to put on latex gloves for this step).
Place the balls onto a baking sheet lined with parchment until all balls have been rolled.
Next, place your topping ingredients separately into small bowls and carefully roll each truffle in one of the toppings until fully coated, shaking off any excess.
Place all dressed truffles onto a platter and serve or place in small candy boxes to give away as gifts.
