If you love fries (and really, who doesn't??) you won't want to miss this recipe from Louise Leonard http://www.thelusherie.com . These zesty, curry fries are baked instead of fried, so they're a bit healthier...but the spicy orange ketchup makes them burst with flavor. YUM!

Serves 4
For the Fries:
3 Idaho potatoes, cut into ¼ x ¼ strips
3 tbsp extra virgin olive oil
3 tbsp curry powder
2 tsp sea salt
4 cloves garlic, minced
2" piece ginger, peeled and minced
For the Ketchup:
¼ cup ketchup
¼ cup orange marmalade
Hot sauce, to taste*
Preheat the oven to 450 degrees.
In a large bowl mix together all the ingredients for the Curry Fries. Oil a sheet pan and evenly disperse the fries onto the pan. Bake until golden brown and crispy, approximately 20 minutes.
While the fries are cooking, make the ketchup. Simply mix together all the ingredients for the Spicy Orange Ketchup.
*I prefer using an Asian hot sauce, such as Sriracha or Sambal, which is a chili paste.
