This sweet treat from Bob Guiney is a nice change from the classic hot fudge sundae! It's got melted caramel and crunchy, toasted coconut...but let's be honest, you still need your chocolate fix, so there's chips in there as well! Give it a try!

Serves 2
4 scoops vanilla ice cream
1 cup heated caramel sauce
½ cup toasted coconut
½ cup chocolate chips
Spread shredded coconut in a single layer on a baking sheet. Bake at 300 degrees for about 20 minutes. Make sure to watch it so it doesn't burn!
Pour caramel sauce into a saucepan and stir until warm and runny.
Put 2 scoops of vanilla ice cream in each glass.
Top with caramel sauce, shredded coconut and chocolate chips.
