Jenny Park ( http://spoonforkbacon.com ): There's nothing like waking up on Christmas morning ... to a warm, scrumptious breakfast! And this casserole recipe is the perfect dish. It's easy to whip together, feeds a ton of people, and has all your major food groups represented: eggs, potatoes, sausage, veggies and bread. So, there's no need for any additional sides nor the clean up that goes with it. Enjoy!
Makes 1 9"x12" (23cm x 30cm) casserole
¼ cup (60 g) unsalted butter, softened
8 eggs
1 cup (240 mL) cream
1 cup (60 g) sourdough baguette, cut into ½ inch (13 mm) cubes
1 cup (150 g) baby new potatoes, cooked and quartered
1 cup (230 g) breakfast sausage, cooked and crumbled
⅔ cup (60 g) mild cheddar cheese, grated
1 red bell pepper, seeded and diced
½ yellow onion, diced
3 green onions, thinly sliced
2 tsp (20 mL) salt
black pepper to taste
Preheat oven to 375°F (190°C).
Generously grease a 9x12 inch (23cm x 30cm) baking dish with the softened butter and place in the oven for 15 minutes.
In a mixing bowl, whisk together the eggs and cream until completely combined. Whisk in the remaining ingredients and season with pepper.
Remove the baking dish from the oven and carefully pour the egg mixture into the dish.
Place the baking dish back into the oven and bake for 45 to 55 minutes or until golden brown and fully set in the center.
Allow the casserole to cool for 5 minutes before serving.
