Sienna DeGovia ( http://siennacake.com ): My husband loves pizza, but pizza delivery gets pretty expensive ... not to mention all the added calories! So, I created this healthy alternative using simple ingredients and store-bought dough. This recipe is the perfect weeknight meal. It's quick and easy to make and a great (cheaper!) alternative to delivery. Your kids -- and picky eater hubbies -- will love it!
1 round pre-made pizza dough, divided in half
1 tablespoon (15 mL) all purpose flour
1 sweet onion, sliced
1 red bell pepper, sliced
1 orange bell pepper, sliced
1 yellow bell pepper, sliced
2 tablespoons (30 mL) olive oil
¼ cup (60g) marscarpone
small hunk of pecorino cheese
1 bunch fresh basil
sea salt and black pepper to taste
Heat oven to 500°F (260°C). Place onions and peppers in baking dish, drizzle with olive oil and toss to coat. Place in oven on lower shelf.
Meanwhile, set dough on lightly floured work surface in a warm spot and allow to come to room temperature, about 20 minutes. When dough is warm and pliable form into a disk and use a rolling pin to roll it out as thin as possible.
Place dough in the oven on a baking sheet on the top shelf and
cook until crisp and brown, about 5-10 minutes. Pull out your finished dough and the roasted vegetables.
Spread dough with marscarpone and top with roasted vegetables. Grate pecorino over the vegetables. Top with torn basil leaves and season with salt and pepper.
