Sienna DeGovia ( http://siennacake.com ): This is a fun twist on homemade truffles. It uses a basic recipe, but instead of shaping the truffle into a standard sphere, they become cute, playful mice. It's the perfect treat to prepare with friends or family, especially little ones, and they make a great gift!
12 oz (340 g) white chocolate chips
4 oz (110 g) cream cheese, softened
2 cups (200 g) ginger snaps, finely crushed
1 cup (100 g) powdered sugar or coarse sugar crystals
½ cup (65 g) sliced almonds
24 red licorice strings, cut into 2" (60 cm) lengths
additional cake decorations for eyes if desired
In a microwave safe bowl heat the white chocolate chips until completely melted, stirring every 30 seconds. Reserve two tablespoons (30 mL) of the melted chocolate in a zip lock baggie.
In a large bowl combine remaining melted chocolate, cream cheese and ginger snap crumbs. Chill mixture in fridge until it's easy to handle but still slightly sticky, about 30 minutes.
Roll heaping tablespoonfuls of the mixture into balls, tapering at one end to form the mouse nose. Roll each mouse in the powdered sugar or sugar crystals to coat. Place mouse on cookie sheet lined with wax paper or parchment.
Poke two almonds into the front of the mouse for the ears and the licorice into the back to form the tail. Use scissors to snip off a tiny corner from one end of the white chocolate baggie. Pipe the white chocolate to affix cake decorations to the mouse for eyes and to hold the ears and tail in place if necessary.
