There's nothing fancy about this recipe...it's just a great idea and a quick, easy, colorful meal to throw together for breakfast or dinner! Scrambled eggs and warm tortillas go so well with all these fresh Mexican flavors...you could also drizzle some enchilada sauce over the top to take it up another notch. Enjoy!

2 Italian sausages cut out of their casings
1 cup cheddar cheese
¼ cup chopped chives
1 large avocado
¼ cup sour cream
¼ cup pico de gallo
¼ cup fresh chopped cilantro
Salt and pepper to taste
Cook the sausage until browned and soak up the extra grease with paper towels.
Scramble 6 eggs and add cooked sausage, cheddar cheese and chopped chives.
Top with slices of avocado, a dollop of sour cream, some fresh pico de gallo and a little cilantro.
Serve with warm corn tortillas on the side.
