This orzo salad with sweet watermelon, salty feta and fresh basil is a refreshing, delicious side dish for any meal. Make it at your next summer BBQ...your guests will LOVE it!

1 bag orzo
2 cups sliced seedless watermelon
½ cup crumbled feta cheese
½ cup thinly sliced fresh basil
1 long drizzle of extra virgin olive oil
Salt and pepper to taste
Cook Orzo and place under running water to cool it off.
Combine in a bowl with cubed watermelon, thinly sliced fresh basil, olive oil, salt and pepper. Add a little lemon zest at the end for some extra zing.
