Jenny Park ( http://spoonforkbacon.com ): A lazy weekday dinner doesn't have to mean deciding between cheap take-out or microwaving a packaged dinner tray. You'll be surprised how fast you can whip up this delicious turkey panini. All the ingredients can be purchased at your supermarket and it only takes a few minutes to build your sandwich. Buon appetito!
Serves 2
2 tbsp (30 mL) mayonnaise
2 tbsp (30 mL) store-bought pesto
4 slices sourdough bread
6 slices provolone, halved
6 ounces (170 g) thinly sliced turkey breast
½ cup (75 g) thinly sliced roasted red bell pepper
3 tbsp (45 mL) extra virgin olive oil
Preheat a panini press or grill top.
Combine the mayonnaise and pesto in a small bowl and stir together. Spread the pesto mayo onto each slice of bread.
Gently place three pieces of provolone onto each slice of bread. Next place 3 ounces (85 g) of turkey onto two pieces of cheese covered bread.
Divide the roasted red peppers and place over the turkey. Top each panini with the remaining cheese bread slices and gently press together.
Brush oil onto the surface of the heated panini press and toast the sandwiches, one at a time.
When the paninis are ready, remove from the press and allow to sit for 30 seconds to a minute. Slice each panini in half and serve.
