Let's face it, if we gave our kids the option, they'd probably eat mac and cheese for every meal. We want to make our children happy, but not at the expense of feeding them unhealthy food, right? Well, with this mac and cheese, everyone can be happy. This recipe uses real ingredients like milk, peas, brown rice pasta and REAL cheese -- not the bright orange powder that comes in a packet. The best part it is it doesn't take much longer to prepare than the boxed varieties. Now that's what you call a win-win!

1lb (450 g) brown rice pasta (or any pasta you choose)
2 tbsp (30 g) butter
2 tbsp (15 g) flour
1¼-1½ cups (300--350 mL) low-fat milk
½ tsp (2.5mL) salt
1 cup (115 g) lite shredded cheddar cheese
1 cup (170 g) frozen peas
Cook pasta according to package
Melt butter in pan, add flour, whisking until a paste forms. Cook for 1 minute. Be careful not to burn.
Slowly add milk, whisking to incorporate. Add salt.
Add peas until cooked through about 1-2 mins.
Turn off heat and add cheese.
Drain pasta, add to cheese mixture. Freeze leftovers.
